Pinot Noir
Pinot Noir is the only grape variety that produces rosé or red wines in Alsace. The Pinot Noir are dry with beautiful aromas of red fruits like morello cherry. Some are lighter and softer, others more structured, powerful and complex (Cuvée Fernand, Meyerhof).

Concentration wines, original and dry. They are the result of the audacity and creativity of Xavier, the wine expert. The grapes are picked very ripe and part of the harvest is placed on racks. These grapes will go through passerillage for 3 months before being pressed and reincorporated into the first wine.

This delicate, elegant wine is ideal for cellaring. Aromas of ripe fruit, beeswax and "passerillage" (process of drying the grapes to concentrate sugars). Hints of brioche. Goes well with more elaborate dishes.
